Creamy white beans in a bright, charred tomatillo sauce finished with Zesty Lemon Sea Moss and a crunchy coriander salad. Serve with tortilla chips or warm flatbread.

Ingredients

  • 8 medium tomatillos, husks removed and rinsed
  • 1 small white onion, quartered
  • 1 jalapeño, halved
  • 3 garlic cloves
  • 1 tablespoon olive oil
  • 2 cans white beans, drained and rinsed
  • ½ cup vegetable stock or water
  • 1 teaspoon ground cumin
  • Juice of 1 lime
  • 2 tablespoons Zesty Lemon Sea Moss gel
  • Salt and black pepper to taste
  • 1 cup roughly chopped fresh coriander
  • ½ small cucumber, finely diced
  • ¼ small red onion, thinly sliced
  • 1 tablespoon lime juice (for salad)
  • 1 teaspoon extra-virgin olive oil (for salad)
  • A pinch of salt (for salad)
  • Garnishes: Sliced avocado, tortilla chips or warm flatbread, extra coriander, lime wedges

Step-by-Step Instructions

    Preheat the oven grill or broiler.

    Place the tomatillos, white onion, jalapeño and garlic on a baking tray. Drizzle with olive oil and season lightly with salt.

    Grill for 8–10 minutes, turning once, until softened and lightly charred.

    Transfer the roasted vegetables to a blender. Add the cumin, lime juice and vegetable stock, then blend until mostly smooth.

    Pour the sauce into a saucepan and add the white beans. Simmer gently for 8–10 minutes, until the beans are hot and the sauce thickens slightly.

    Remove the pan from the heat and allow it to cool for a few minutes.

    Stir in two tablespoons of Zesty Lemon Sea Moss gel until fully combined. Do not boil the gel.

    To prepare the salad, combine the coriander, cucumber, red onion, lime juice, olive oil and salt in a bowl.

    Spoon the tomatillo beans into bowls. Top with the coriander salad, avocado and extra herbs.

    Serve with tortilla chips, flatbread and lime wedges.

Kitchen Pro Tip:Add the Zesty Lemon Sea Moss only after removing the beans from the heat. Store the coriander salad separately so it stays crisp.
